This pasta is a great midweek dinner. The roasted courgette, toasted walnuts, basil, garlic and lemon juice make a delicious pesto, and the wilted spinach adds extra veg to the dish. We love to top this with freshly cracked pepper and a sprinkling of chopped walnuts.
